BUT! fazzoletti di ...I know I am late to the party. BUT! fazzoletti di seta does NOT contain eggs in the pasta. The "silkiness" of the fazzoletti comes from white wine in the dough. Mix 1 1/2 cup of flour per 1/2 (half) a cup of white wine and mix the pasta like you would any. making sure you stretch to the 1 1/16 or so desired thickness. Experiment with the thickness so the "handkerchief" does not break in the boiling water. The name of silk handkerchiefs come from the fact that the wine mix with the flour give it a very very delicate texture. Sorry about the late reply.
