Caponata (Eggplant Salad)

We've been eating Italian this week because my boys are experimenting with the new pasta machine. Frankly, and I never thought I'd say this, I'm now sick of pasta ! I can still eat it, but it's just that it's so much carbs and that's really bad for dinner. This dish is a change from the usual leaf salad. I think we 'll eat Korean next week.

Caponata
1 large aubergine/eggplant or 1/2 kg brinjals
1/2 cup stoned green olives
2 T capers
grated rind & juice of 1/2 lemon
3 to 4 T olive oil
1 T chopped fresh flat-leaf parsley
1/8 t freshly ground black pepper
2 T toasted pinenuts & some shaved parmesan

1. Cut the eggplant into 1"/2.5 cm cubes. Heat a skillet, add the oil and fry the eggplant over low heat, stirring frequently. Add a sprinkle of water now and then. Fry about 7 to 8 minutes till eggplant is softened (but not mushy).

2. Toss fried eggplant with the remaining ingredients, except pinenuts and parmesan, which are sprinkled on top. Add salt if like. Serve warm, with bread or pasta.

    denise: gosh, yes, it'll be 2008! how come 2007 still feels ..new. i read somewhere tt the reason why we feel time passes faster when we are older is bc it's really relative to our age/experience. eg. 1 day to a 10 year old is 24hrs divided by 10 yrs x 12 months x 24 hrs = 0.00833 hr but to a 40 yr old it is 24 divided by 40 x 12 x 24 = 0.00208 hr so ur 'perception' or feel of one day gets shorter and shorter as you grow older even though it's still 24 hrs a day for everybody. u buy it??

    yi: i couldn't find a recent fam pic. those kakak took when u came back r so abstract - she took mostly our knees, or tops of our heads .i sense u r feeling better. good luck on ur presentation to the panel 2morrow. i have full confidence in my girl!

  7. i also feel time passes fast, every year become short than last year. i always forgot what i did during this year! i thoght i did nothing, but no more time, the year is going to the end !

  9. looks very yummy but that is not italian caponata, it's a fried aubergine salad. Caponata is a stew made with aubergines, olives, celery, peppers, tomatoes, sugar and vinegar. It is served cold as a spread but it is a vegetable stew.
    BTW Italians eat homemade pasta (the one made with soft wheat and eggs) on special occasions like Christmas, birthdays and so on, we don't eat it on a daily basis as it is "celebration food". What we do eat quite often is dried durum wheat pasta which has a low GI.
