Green Eggs
Initially I wanted to make 'green eggs and ham' from Nigella Lawson's new book, Nigella Express. But since the book just came out, and I didn't want to be accused of recipes plagiarism, I made scrambled eggs instead. I also drizzled some truffle oil over for extra flavor. Try it, the pesto goes really well with the eggs. If you want the scrambled eggs greener, remove some of the yolks or use non-organic eggs.
Nigella's green eggs and ham, sort of.
Green Eggs
1 T pesto sauce
2 eggs
1 T milk
50g (or more, upto you) ham, diced
pinch of salt
1 T (or less) oil for frying
truffle oil (optional)
1. Mix the pesto, milk, eggs and ham well using a whisk. Heat up a frying pan, add the oil and pour in the egg mixture. Keep temperature at medium.
2. When the eggs start to set a little around the edges, stir round and round with your frying spoon continuously under medium-low heat until eggs are no longer runny. Do not overcook, the eggs must still very wet.
3. Dish out onto a serving plate. Drizzle some truffle oil over and serve with a good toast.
I woke up at 6:30 am to do these eggs for my boys (pesto sauce made last night with basil leaves from my garden) so the pics didn't turn out well because of the poor lighting. Hub spotted an 'adolescent' kingfisher calling among the hibiscus bushes, and took a pic which didn't turn out too bad considering he didn't use a tripod.
Before i read the post, i glimpsed through the photos first. Got a shocked cos i tot you used Kingfisher's egg! Phewww!
ReplyDeleteWhat basil did you use? Am confused between Holy Basil, Sweet Basil and another basil that i can't remember its name!

ReplyDeleteHoly basil?? is tt in Rome?? haha. I only know Thai basil, which usually has a purple tip of flowers n dark stem, smaller leaves, stronger scent. sweet basil is the western basil, bigger leaves. u can check it out at my post on pesto sauce, i think under pasta n pizzas.grow some urself, Ivy. they do well in strong sunlight n good soil. get d seeds frm supermarkets or garden suppliers.ready for harvest in 4 to 6 weeks, n u can keep the plant longer by nipping off the stems n they'll sprout new shoots. how r ue bulbs doing??.
The omelette looks so delicious...almost feel like i am actually eating them. arrrrgghhh...how to diet like tat.
ReplyDeletebtw try the namyue recipe with spare ribs. i love it but greg says not his favourite dish but he says he knows the recipe is a well balance one (before i tell him it is from you. then he says no wonder).

ReplyDeleteWhen I was in Chatuchak, we came across this shop selling basil seeds and we didn't know which to get. In the end I got the sweet basil cos from the photo, it looks like those we put in Pho.
OMG! I forgotten about the bulbs!!! LOL!
You know what? Hubby sneaked back a water lily plant. The wrapped it in a plastic bag with oxygen. Here in KL per pot starting from RM25 and guess how much we got ours from Chatuchak? RM1 !!!!!
